Sausage & Tomato Pasta

My focus on this blog will be quick and easy recipes. They're perfect for when you're busy and don't have much time to cook. Extra plus, the ingredients are pretty inexpensive.

1 can Diced Tomatoes (or you can use fresh)
Olive Oil
1/4 cup Onions (fresh, frozen or dried)
1 cup Frozen Artichoke Hearts (or canned in water)
6 oz Sausage (usually I use sage breakfast sausage, but italian sausage works great too)
-- Amounts are flexible, according to your desired taste and consistency and how many you're cooking for

1. Chop artichokes into small pieces. Boil until tender and drain.
2. Cook sausage until done.
3. Boil pasta to desired tenderness.
4. While pasta is boiling, add tomatoes, garlic, onions and olive oil to artichokes to make sauce.
5. Mix pasta with sauce and serve with parmesan cheese to flavor.

Serves 2-4
