Favorite Roast Beef Sandwich

2 slices 100% whole wheat bread
4 slices roast beef
1 1/2 slices swiss cheese
1 roma tomato
1/4 cup pea shoots
2 tbsp dijon balsamic dressing (see recipe below)

1. Slice tomato into 1 cm thick slices.
2. Spread balsamic dressing onto one slice of bread.
3. Layer roast tomato and pea shoots, then roast beef and swiss cheese.
4. Top with remaining slice of bread.

Serves 1

Dijon Balsamic Dressing

10 tbsp Dijon mustard
10 tsp chives
10 tsp balsamic vinegar

1. In a small bowl combine Dijon mustard and balsamic vinegar and stir until well-mixed.
2. Add chives and stir again.

Use as dressing for sandwiches, salads and more.

  1. Ohmygod. This looks amazingly delicious! I love the wonderful arrangement! But just one question... how does one bite into all of that without it falling apart? That's always my problem when eating sandwiches not fit for my small mouth. You used pea shoots for the greens. That's very unique! Swiss & provolone are my favorite sandwich cheeses.
